Green asparagus

Green asparagus are one of my favourite vegetables! I usually cook them in a pan, with a little bit of oil, instead of boiling them. I think they loose their taste and texture when they are boiled...
Here is one of my favourite way of preparing green asparagus:


Green asparagus alla plancha

Ingredients:
1 tablespoon of sunflower oil, or 1 teaspoon of ghee
1 teaspoon of cumin seeds
1 teaspoon of strong paprika (or 1/4 teaspoon of chilli powder)
1 teaspoon of turmeric
1 tablespoon of chopped almonds, quickly dry roasted in a pan
salt, pepper
balsamic vinegar to decorate the plate

1. Wash the asparagus and cut the stem.
2. Heat the oil / ghee in a pan
3. Add the cumin seed for 1-2 minutes. When they start to smell nice and become a bit brown, add the paprika. Stir.
4. Add the asparagus, turmeric, salt, pepper and some water. Stir. Reduce the heat and cover with a lid.
5. Let it cook for about 5 minutes. Asparagus should be tender but firm and all water should be evaporated. If water has evaporated before the 5 minutes, add some more.
6. Put the asparagus in the serving plate, sprinkle the almonds on them. You can add a few drop of balsamic vinegar, too. I prefer decorating the plate with a few drop of Balsamic vinegar, instead of putting it directly on the asparagus. For decoration, it is better to pour some balsamic vinegar in a pot and have it reducing for 5 minutes. It will become thicker and slightly caramelised.
